WoW! What a week it has been. I just finished up my Twelve Days of Christmas special where I listed my Twelve favorite Christmas candies. After posting for 12 days straight, I took a few days off, and now I am back in the saddle ready to go again. I was pondering what I could post when I came back, and I thought this Crockpot Pork Chop dinner would be the best thing.
My wife is a firm believer in Crockpot meals. Just the ol saying of “set it and forget it” seems to make the world a better place.
So it’s still early in the A.M., and I am thinking of what all I have and could fix for supper. Found some nice, thick pork chops in the fridge. I started looking at what all else I had in the fridge, and voila! I came up with the perfect crockpot dinner. Now when I say dinner, I mean everything in one bucket.
In the bottom of the crockpot, I put potatoes, asparagus, corn on the cob, whole onion, and an orange bell pepper. Then I topped all that off with the pork chops. I was lucky enough to have a large stock of pork broth and poured that in there as well. Now I could have used chicken broth if I did not have the pork broth, but I was just on a roll today with all my ingredients.
Well with the weather outside looking dark and gray and temperatures starting to plunge, this was turning out to be the perfect day for a hearty meal. I was excited not to have to go out in the weather and do some shopping.
Checked on the crockpot a few times to make sure it was all going to get done; I was somewhat nervous because this was full to the lid. As the veggies started breaking down and becoming more tender, I noticed the pork chops began to sink under the broth as everything started to settle in. What I love also about a crockpot meal is the fact that having the lid on seems to keep in some of the aroma, and once it is off it’s like a cloud of deliciousness just exploded in the kitchen.
Now I know I listed ingredients earlier, but one good thing about this recipe is that you can just put anything you want in the crock pot. Personally, I love cooking pork chops with potatoes, but you could also put in carrots. You could add just a bunch of vegetables like a vegetable soup, and put the pork chops over that just for some meat with the soup. You will not have to worry about scorching it. Just go low and slow, and you will be fine.
As you can see all of it came out great, and dinner was a huge success. The pork chops came out tender along with the potatoes, corn, and asparagus. This meal is perfect for a cold day, and the family will enjoy it. Trust me.
- 1 pkg Pork chops can be any kind you like. Try for bone in though
- 1 pkg of Asparagus
- 2 regular size potatoes per person eating
- 1 ear of corn per person eating
- 1 pkg of Carrots. Cut in a package or just long and unprepared. You will need to skin them and prepare them for the crockpot
- 1 whole Onion cut up
- 1 whole bell pepper (either red, yellow, or orange would be great)
- I just layer the ingredients starting with potatoes, then asparagus, peppers, carrots, onions, corn, and then pork chops.
- Set to high for a short cook about 4 hours. Low for about 8 hours.
